Abstract

A study was conducted to utilize bovine trachea, a by-product obtained from slaughter house to extract chondroitin sulphate. Chondroitin sulphate was extracted by digesting trachea with 0.25% papain after defatting with 20% ethanol. Further the chondroitin sulphate was precipitated using 10% trichloroacetic acid, dialysed and lyophilized. Physico-chemical properties like pH, yield, instrumental colour analysis and proximate analysis of chondroitin sulphate were determined. The yield of chondroitin sulphate from bovine trachea was 3.78±0.14%. The moisture, protein, fat and ash content of extracted chondroitin sulphate was 6.13±0.13, 55.83±1.31, 21.74±0.14 and 6.58±1.15% respectively.
